Chicken and Noodles

6 pieces of cut up chicken
2 tsp. cooking oil and 1 pat butter
Salt and pepper to taste on chicken
Cook chicken in pan on all sides until golden but not thoroughly
Remove to shallow baking pan
Cook 1 small onion, chopped, in pan with oil and add 1 garlic clove plus
3-4 kinds of mushrooms; shitake, oyster, carmine and white button, chop coarsely
When onion is clear, pour in 1/4 cup Marcella wine or dry sherry, mix well with onions
and mushrooms then add 1/2 cup chicken stock. 
Serve with green leafy salad and no yolk noodles.

Chowder

Cook 1 tsp. of oil & onion sliced small
When onion softens add 1 large can of Hunts tomato sauce
Then 1 pint of clam sauce &  2 cups of water
1 pint of quohaugs cut up
4 or 5 pototoes cut up small - already cooked
Cook for 5 minutes.
